This is a straight forward recipe for a stir fry. While it may not be complex, it does manage to get vegetables in to your diet. I’ve made this dish with various vegetable combinations, but I believe this combination is my favorite.
Vegetarian Stir Fry
Ingredients
- 2 cups broccoli
- 2 stalks celery
- 2 carrots
- 1 medium red pepper
- 1 small onion
- 1/4 teaspoon garlic powder
- 1/8 teaspoon ginger
- 1/8 teaspoon cumin
- 1 tablespoon soy sauce
- 3 tablespoons hot water
- 1/8 teaspoon sugar
- 1/2 teaspoon corn starch
- 3 tablespoons oil
Preparation
- Heat a large pan to medium high heat.
- Add oil to pan.
- Dice onion. Add onion to pan.
- Peel and slice carrots. Add carrots to pan.
- Slice celery. Add celery to pan.
- Dice broccoli. Add broccoli to pan.
- Add garlic, ginger and cumin to pan.
- Cook for 7 minutes.
- Dice red pepper. Add to pan.
- Cook for 3 minutes.
- Put the hot water into a small bowl.
- Add corn starch and sugar to hot water.
- Stir mixture until corn starch and sugar are dissolved.
- Add soy sauce.
- Pour mixture into pan with vegetables.
- Stir vegetables to ensure even coating.
- Cook for 5 minutes.
