My friend Jim came up with a recipe for vegetarian chili that was different from mine this year. It uses different beans, different vegetables and tastes great.
Note: This recipe makes a rather hot chili, so if you like you like your chili milder, reduce the amount of chili powder and black pepper.
Spicy Vegetarian Chili

Ingredients
- 2 19 ounce cans 6 bean medley
- 2 19 ounce black beans
- 2 tomatoes
- 1 1/2 cups corn
- 1 medium onion
- 2 sweet red peppers
- 2 banana peppers
- salt
- black pepper
- 1 teaspoon cayenne pepper
- 2 teaspoons chili powder
- oil
Preparation
- Add oil to fry pot.
- Roughly chop onion. Add onion to pot.
- Cook for 5 minutes on medium low heat.
- Roughly chop red and banana peppers. Add peppers to pot.
- Cook for 3-5 minutes on medium low heat.
- Roughly chop tomatoes. Add tomatoes to pot.
- Cook for 3-5 minutes on medium low heat.
- Add six bean medley and black beans to pot.
- Add cayenne and chili powder to pot.
- Add corn to pot.
- Add salt and pepper to taste.
- Stir and simmer on medium low heat.
- Cook until beans have softened and consistency suits. (at least 1/2 hour)
