We’ve had several extremely tasty recipes that weren’t strictly healthy over the last week, so I figured it was time to do a post about something that was good for you. On the up side, this one is also very delicious!
The original recipe for this salad, I believe was from Women’s World magazine. As with most of the recipes on the site, we’ve made a few changes to it.
Easy Two Bean Salad Recipe
Ingredients
- 1 cup frozen corn kernels
- 1 can black beans
- 1 can white kidney beans
- 1/3 cup oil and vinegar salad dressing
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 2 stalks celery
- 2 green onions
- 1/3 cup Parmesan cheese

- Oil or spray a frying pan.
- Heat frying pan to medium high heat.
- Add corn and cook for five minutes or until lightly browned.
- Add black and kidney beans.
- Cook for 2 minutes or until heated through.
- Add salad dressing, lemon juice and salt to a large bowl.
- Mix thoroughly until well blended.
- Add green onions, celery and heated corn mixture to bowl and mix thoroughly.
- Add Parmesan cheese and mix again.
Vegan Substitutions
If you have a Parmesan cheese substitute add that instead, but if that’s not available it isn’t a central ingredient and could be removed from the recipe.
