My gluten free vegetarian chili is one of my favorite recipes. You will find that it appears in some of my other recipes. I should warn that this recipe makes a lot of chili.
Gluten Free Vegetarian Chili Recipe
Ingredients
- 1 28 oz can of Diced Tomatoes
- 2 14 oz cans of Vegetarian Baked Beans
- 2 14 oz cans of Red Kidney Beans
- 1 small onion
- 1 clove garlic
- 2 oz broccoli
- 4 stalks of celery
- 2 carrots
- 1 small green pepper
- 6 mushrooms
- Seasoning Salt
- Italian Seasoning
- Cayenne Pepper
Preparation
- Open cans of Tomatoes and beans and add to pot.
- Dice onions and garlic and add to pot.
- Cover, Turn heat to medium low and cook for 1 1/2 hours.
- Stir occasionally.
- Add broccoli, celery, carrots, mushroom and green pepper.
- Add Seasoning Salt, Italian Seasoning and Cayenne Pepper to taste. (Note: I find a lot of spice is required to get the proper flavor)
- Cook for an additional 1/2 hour.
