Gluten Free Vegetarian Chili

My gluten free vegetarian chili is one of my favorite recipes. You will find that it appears in some of my other recipes. I should warn that this recipe makes a lot of chili.

Gluten Free Vegetarian Chili Recipe

Ingredients

  • 1 28 oz can of Diced Tomatoes
  • 2 14 oz cans of Vegetarian Baked Beans
  • 2 14 oz cans of Red Kidney Beans
  • 1 small onion
  • 1 clove garlic
  • 2 oz broccoli
  • 4 stalks of celery
  • 2 carrots
  • 1 small green pepper
  • 6 mushrooms
  • Seasoning Salt
  • Italian Seasoning
  • Cayenne Pepper

Preparation

  1. Open cans of Tomatoes and beans and add to pot.
  2. Dice onions and garlic and add to pot.
  3. Cover, Turn heat to medium low and cook for 1 1/2 hours.
  4. Stir occasionally.
  5. Add broccoli, celery, carrots, mushroom and green pepper.
  6. Add Seasoning Salt, Italian Seasoning and Cayenne Pepper to taste. (Note: I find a lot of spice is required to get the proper flavor)
  7. Cook for an additional 1/2 hour.
