I figured it was time I tried a desert recipe. A friend of mine has been making this recipe for years and thought I would like it. She was right. I love these cookies. I think you will find it both tasty and gooey.
One note about this recipe: It requires oats. Many brands of oats have cross-contamination issues, so I would suggest a brand like Lara’s Rolled Oats which is tested to ensure that no wheat has been introduced.
Yummy & Easy No Bake Chocolate Macaroons
Ingredients
- 1/2 cup milk or soy milk
- 1 3/4 cups white sugar
- 1/2 cup butter or margarine
- 1 tsp. vanilla
- 2 1/2 cups rolled oats
- 6 tbsp. cocoa
- 1 cup coconut
Preparation
- Bring milk, sugar and butter to a boil in the top of a double boiler on high heat.
- Stir and let cool 1 minute or until sugar melts.
- Set heat to medium low and stir in vanilla, oats, cocoa and coconut.
- With a spoon, make small mounds on wax paper.
- Place in refrigerator to cool.

I agree, these are a great way of treating yourself to some chocolate and coconut. Try substituting 1/4c. Organic, Gluten Free Back 2 the Garden Sprouted Flaxseed Powder for 1/4 c. rolled oats. This adds a bit of texture, omega 3’s, and increased vitamins and minerals quickly and easily. It is one way of ensuring your free radicals get a good mopping, and you get a dose of Omega 3’s to boot!
