While this recipe might not be the fanciest on the site it is both tasty and helpful. I make a lot of dishes that require cream of tomato soup. Buying cans of gluten free cream of tomato soup can get a bit expensive. So, without further ado, here is the recipe!
Gluten Free Cream of Tomato Soup
Ingredients
- 1 28 oz can of tomatoes
- 1 green onion
- 1/2 tsp parsley
- 1/4 tsp baking soda
- 1/8 tsp garlic powder
- 1/2 cup milk
- 1 tsp corn starch
Preparation
- Put tomatoes into blender.
- Puree tomatoes.
- Pour pureed tomatoes into pot.
- Dice green onion and parsley.
- Add green onion, parsley and garlic powder to pureed tomatoes.
- Cook on medium low heat for 10-12 minutes, stirring occasionally.
- Add baking soda to mixture.
- While stirring mixture, slowly add milk.
- Mix corn starch to an ounce of hot water and stir until dissolved.
- Add corn starch and water to soup and stir.
- Cook on medium low heat for another 5 minutes.
Serve.
