I read through a handful of corn bread recipes looking for one to adapt to gluten free before I made this. It turns out that most of them were almost identical. What we ended up doing was using the recipe and substituting gluten free all purpose flour and a teaspoon of xanthan gum instead of traditional flour. We felt it turned out rather well.
Corn Bread
Ingredients
- 1 cup cornmeal
- 1 cup gluten free all purpose flour
- 1 tsp xanthan gum
- 1 tbsp baking powder
- 1/2 teaspoon salt
- 3 tbsp sugar
- 1 egg
- 1 cup milk
- 1/4 cup oil
Preparation
- Add all ingredients into a bowl.
- Stir just enough to mix.
- Pour into a 9 by 9 baking pan.
- Smooth mixture into pan until even.
- Bake at 425°F for 20 minutes or until top is lightly browned
