I could only post healthy recipes for so long before I needed to make something that was just for enjoyment. I checked back through some recipes and found one for Chocolate Chip Cookies. This is exactly what I felt like having today, so we gave it a try and it turned out great.
Once again, the flour I used in this recipe is a gluten free all purpose flour that I got at Bulk Barn.
Chocolate Chip Cookies

Ingredients
- 1/2 cup vegetable shortening
- 6 tablespoons white sugar
- 6 tablespoons brown sugar
- 1 egg
- 1/2 teaspoon vanilla
- 1 1/3 cup gluten free flour
- 1/4 teaspoon xanthan gum
- 1/2 teaspoon baking soda
- 3/4 cup chocolate chips
Preparation
- Add shortening, white sugar, brown sugar, egg and vanilla in a bowl.
- Stir ingredients until thoroughly mixed.
- In a separate bowl, add gluten free flour, xanthan gum, baking soda and chocolate chips.
- Mix these ingredients together.
- Pour the dry ingredients from the second bowl into the first bowl.
- Stir all ingredients until thoroughly mixed.
- Place a teaspoon of cookie dough every 2-3 inches on greased or wax paper covered cookie sheet. Mixture should make roughly 30 cookies.
- Heat oven to 375°F and bake cookies for 9 minutes or until edges are lightly brown.

Made these today using butter instead of the vegetable shortening as we are not vegetarians.. and my husband says they are goooood!
